Balsamic Roasted Pork Loin

Ingredients:
½ c balsamic vinegar
½ c olive oil
2 T steak seasoning rub
2 lbs boneless pork loin roast

Directions:

  • Stir together vinegar, oil and steak seasoning in a bowl. Put pork in a zip-top plastic bag and pour in marinade. Squeeze air out of bag, seal and refrigerate, turning once, for at least 2 hours or up to 8 hours (overnight).
  • Preheat oven to 350 degrees.
  • Transfer pork to a 9x13 inch glass baking dish and pour in marinade.
  • Roast pork, basting every 15 minutes, until meat thermometer registers 145 degrees, 1-1.25 hours.
  • Let stand 10 minutes before slicing. ■
